This weekend, Colin’s fave football team, the Steelers are playing for a spot in the SuperBowl, and he asked me to make some yellow & black food for some football watching. By “asked”, I mean that he sent a text message out to some friends saying I would do so. Yellow & black food??? What the heck is black? Black olives……black…mushrooms? I”m racking my brain and decide to bail on the black and focus on yellow. Well, when I think of football food, the first thing I always think of is wings. Greasy, tasty, definitely not healthy, chicken wings covered in sauciness! Tumeric always gives a beautiful yellow hue to anything you add it to, so I decided on a curry chicken wing. I took my go-to chicken wing recipe (honey, lime, chili) and added some yellow curry powder, plus some other goodness.
The resulting dish is a slightly sweet, slightly exotic twist on all american wings. Try it out if you are looking for something a little different to bring to your next football watching party.
Ingredients:
- 2 lbs wings
- 1/2 cup soy sauce
- 3 TB sweet soy sauce (if you can’t find this, you can skip it and add a little more honey instead)
- 1/2 inch ginger, grated
- 1/4 cup honey or agave nectar
- 2 TB yellow curry powder
- 1 TB cumin
- 2 tsp cayenne pepper
- zest & juice of 2 limes
- olive oil
- salt, pepper
- 2 TB butter
Steps:
- Chop up each wing into 3 pieces. Place the meaty parts in a big bowl. Reserve the wing tips in a ziplock in the freezer for making stock at a another date.
- Zest 2 limes directly onto the wings and toss to distribute.
- In a separate bowl, whisk together the soy sauce, sweet soy sauce, honey, grated gingger curry powder ,cumin, cayenne, lime juice, black pepper.
- Pour the marinade over the wings, add a few swirls of olive oil & a few dashes of salt & pepper. Toss to distribute and let marinate for at least 1/2 an hour. (I did not do this and I think I lost some of the flavor potential)
- Heat the oven to 475 while the wings are marinating.
- Line a pan with foil and place the wings in one layer. Bake in the hot oven for 20 min. Flip the wings and bake for another 20 min.
- Once the wings are cooked and getting a nice crisp on the edges, remove from oven and place in a large bowl. Cut up the butter into smaller pieces and toss the hot wings with butter and a few more shakes of salt until the butter is all melted. This will give a very nice rounding out to the flavor of your wings.
- Serve with lots of napkins & plenty of beer!
Yellow dip with black tortilla chips would be cool too :)
