Colin & I have been on this crazy workout program called Insanity and it requires a lot of calorie intake comprised of lean proteins & veggies. You need a lot of calories to fuel you when you work out to the point of passing out in a pool of your own sweat!!
Given this workout program, I’ve had to get creative on what to cook for dinner, so that we aren’t finding ourselves still doing dishes at 10:30 pm after getting home from work, working out, cooking, and then cleaning up after. This dish was a god-send b/c it was so tasty, healthy and labor free. Coming home to a house smelling so delicious DEFINITELY made it hard to work out before eating, but we pushed through and had a delicious reward waiting for us at the end.
This recipe is SO easy and tasty. Perfect for the cold winter weather that everyone’s facing. Nothing like coming home to a meal ready for devouring with no extra work!
Ingredients:
- 2-4 lbs lean beef (rump roast, boneless ribs, chuck roast)
- 2 large tomatoes
- 4 cloves garlic
- dried oregano
- olive oil, salt, pepper
Steps:
- Drizzle a little olive oil in a slow cooker and turn it on to low.
- Cube the tomatoes and smash-peel the garlic cloves
- Cut off any excess chunks of fat on the meat.
- Toss the beef, tomatoes, and garlic into the pot. Add 2 Tbsp dried oregano, 2 tsp salt and a dash of black pepper.
- Put on the lid and leave it while you are at work all day (8ish hours, depending on how evil your boss is)
- Come home and happily inhale the delicious flavors wafting through your front door. The meat should be just falling apart happily in a flavorful broth. As long as you use a lean cut of beef, your broth will have all the flavor w/out much fat in it. Serve over rice or pasta, with a side of fresh sliced cucumbers. Or any other greens you like. I happen to like the contrast of cold, crisp cukes against the warm, soft meat. Make sure you get some of the broth and tomatoes onto your plate with the meat. B/c it is lean beef, the juicy tomatoes and warm broth really enhance the flavor. I actually served the broth as an au jus on the side. Perfect for dipping your meat or a crusty loaf of bread!
