Cinnamon, Raisin & Apple Chickpea Salad

I recently rediscovered chickpeas. Who knew so much power was packed in such a humble little pea? These babies are chock full of  protein & fiber, while staying very low in fat. Most of the fat is unsaturated as well!

When you get the canned variety, look for the no salt/low salt versions. If you can’t find them, rinsing your chickpeas off before eating will actually get rid of a lot of that excess salt.

This recipe is very quick savory & sweet salad that will add a nice flavor variety to any meal.

Servings: 4

Ingredients:

  • 2 cans chickpeas
  • 3/4 cup raisins
  • 1 gala apple
  • 1/2 TB ground cinnamon

Steps:

  1. Drain & rinse chickpeas to get rid of excess salt
  2. Place raisins in a bowl with water and let them rehydrate (You can speed this process up by heating the water as well), and then drain
  3. Slice apple into little bite sized pieces
  4. Toss all ingredients together in a bowl and serve room temp or cold
