Basil Stir Fry

With beach time only 3 months away, I'm newly dedicated to working out and eating healthy (during the week -- I'm only human!!).
I just had a great workout, fought the freezing rain to get home and cook up something good. I realize that I haven't really cooked anything beefy lately, so I decided on a basil beef stirfry for something flavorful and healthy. Let's cook!

Ingredients:
- 1 lb eye of round beef
- 1 onion
- 2 zucchinis
- 2 bell peppers
- bunch sweet basil
- 1 TB garlic
- 3 TB soy sauce
- 1 TB sugar
- 2 tsp garlic powder
- 1 TB honey
- 1/4 can sprite
- 1/2 TB black pepper
- 1/2 cup white wine

1. Slice beef across the grain into thin strips and place in a bowl. Add soy sauce, sugar, garlic powder, honey, pepper, sprite and mix up well. Leave to marinate while you prepare the rest of the ingredients.

2. Slice onions, zucchini, and bell peppers like below. Chiffonade the basil.

3. In a pan, heat olive oil and chopped garlic til garlic starts to pop. Add some of the beef and quickly stir fry. Flipping meat after about 1 min. You do NOT want to over cook here or you will have chewy stringy beef! Repeat until you’ve cooked all the beef.

4. Now your pan is probably all crusty. Keep it hot and add the 1/4 cup white wine to deglaze. Scrape up all the yummy garlic and brown bits. Next add your onions and stir fry about 2 min still they start to get soft.IMG_2783

5. Add the bell peppers and zucchini to pan. You can add more wine and/or some of the leftover marinade at this point to season. Stir fry about 3 min. Add the meat and basil to the pan and cook another 2 min and you are done!

This will taste great over some rice, but I’m gonna hold the carbs and love up on some tasty lean protein!
